The Japanese candies at our confectionery company Toraya are made in accordance with an old record from the Edo period called “The Candy Example Book.” Sometimes we’ll try to make something that isn’t in the book and it won’t work out. In our heads we’ve figured it out, but in practice it fails. Those who came before us must have tried it too. It’s not in the book because it didn’t work.

江戸時代からの「菓子見本帳」というものがありまして、
「とらや」の和菓子は基本的にその記録に沿って作られています。
そこに載っていない新しいことをやろうとしても、どうしてもできないことがある。
頭のなかで考えればできるはずなのに、できない。
先人たちは、それをやっているんですね。できなかったから載っていないんです。
